The short answer

E920 (L-cysteine or L-cysteine hydrochloride) is source-dependent. Fermentation-derived or non-animal synthetic E920 can be halal when its culture media and processing are acceptable. Material made from human hair, pork or an unaudited animal source is not accepted by the halal certifier guidance reviewed here; feather-derived material also needs species, slaughter and supply-chain verification. EU food-additive specifications expressly prohibit human hair as an E920 source, but that does not prove every EU batch is fermentation-derived or halal-certified. When a product gives only the code, treat it as unresolved.

Why E920 cannot receive one universal source verdict

L-cysteine is a sulphur-containing amino acid. Food manufacturers use it in dough processing, and it can also occur in flavour systems. Chemically identical L-cysteine can be produced through very different supply chains, so the molecule’s name does not settle the halal question.

SANHA classifies E920 as Mushbooh and lists animal or human hair, chicken feathers and synthetic production as possible sources. That entry supports a conditional verdict; it does not prove that the bread in your hand used hair. The accurate next step is to identify the actual supplier route.

Is L-cysteine really made from human hair?

Human-hair production is a documented historical and regulatory concern, but it is not a safe assumption about every E920 ingredient. The current EU purity specification for E920 states directly that human hair may not be used as a source. A compliant E920 food additive in the EU therefore should not come from human hair.

That restriction has a precise boundary. It excludes one source in that regulated market; it does not require the label to say “fermentation-derived”, does not rule out every animal route, and is not a halal certificate. A feather-derived additive can comply with the human-hair ban while still requiring halal-source review.

Outside the EU, do not import the EU rule into a different legal system. The current US provisions for L-cysteine and L-cysteine monohydrochloride define the substances, specifications and a permitted dough use, but those sections do not give consumers a universal plant-source guarantee. Ask about the batch or rely on a recognised product certificate.

What E920 does in bread and dough

In dough, L-cysteine acts as a reducing agent that changes bonds within gluten proteins. In practical bakery terms, it can make dough more extensible, reduce mixing demands and help automated production handle the dough consistently. US regulation places its specified use under the regulatory category “dough strengthener”, even though bakers commonly discuss its relaxing or conditioning effect.

The US rule allows total L-cysteine up to 0.009 part per 100 parts of flour for the named use in yeast-leavened baked goods and baking mixes. A loaf can be made without L-cysteine. Time, mechanical development, recipe design and other dough improvers can achieve related manufacturing goals. “Artisan”, “freshly baked” or “made in store” does not establish whether a premix or improver contains it.

Why E920 may be hard to find on a bakery label

Depending on the market, formulation and legal role, a pack may declare “L-cysteine”, “L-cysteine hydrochloride”, “cysteine hydrochloride”, “E920”, “flour treatment agent: E920” or include it among a compound flour or improver’s sub-ingredients. Loose bakery food may provide ingredient information differently from a sealed retail pack.

Do not conclude “not present” from a front-of-pack claim. Ask for the complete ingredient specification for the exact loaf, including improvers and premixes. A staff member’s general statement about the bakery is weaker than the current supplier sheet or certificate.

Likewise, do not treat “enzymes” as another name for E920. Enzymes are proteins that catalyse reactions; L-cysteine is an amino acid. Both can raise halal-source questions, but they require different supplier evidence. Use the separate food-enzyme verification guide when both appear.

Do not combine these into a claim stronger than the evidence. “EU-compliant” can rule out human hair under the cited specification, but it is not identical to “vegan” or “halal”. “Food grade” addresses identity and purity, not religious source.

Does baking transform an unacceptable source into halal?

Ordinary baking changes and reacts ingredients, but a consumer cannot assume that heat automatically performs the complete transformation required by every scholarly view of istihalah. Halal standards differ in how they analyse transformation, and recognised certifiers normally assess the documented raw material and process rather than asking shoppers to infer a ruling from oven temperature.

The practical approach is therefore source-first: choose fermentation-derived, non-animal synthetic or halal-certified E920. If you follow a qualified scholarly position that treats a specific process differently, apply it to evidence about that process—not to an undeclared code.

How to verify E920 in a real product

  1. Record the exact item. Note the bread or mix name, barcode, country, bakery location and label date.
  2. Read nested ingredients. Expand “wheat flour”, “bread improver” and “dough conditioner” declarations where the label provides sub-ingredients.
  3. Check a recognised halal mark. Confirm it in the certifier’s directory and match the product, site and current validity using the halal-logo checklist.
  4. Ask a source-specific question. “Is the L-cysteine in this barcode fermentation-derived, synthetic, feather-derived or from another keratin source?” is more useful than “Is your bread halal?”
  5. Ask for scope. A reply about one market, bakery supplier or flour improver may not cover another country or reformulation.
  6. Keep an unresolved answer honest. If the company will not disclose the route and no certificate applies, use Mushbooh rather than declaring pork without evidence.

A credible vegan certification can be useful evidence against feathers and other animal inputs, but it may not audit every issue in the halal standard you follow. Product-level halal certification remains the more direct evidence.

E920 compared with other bread ingredients

The halal E-number reference helps separate definite, conditional and straightforward ingredients so one unresolved dough conditioner does not turn into a blanket claim about all additives.

E920 is not E921, cystine or “cysteine enzymes”

L-cysteine and L-cystine are related amino-acid materials, but their names and codes should not be swapped. SANHA lists E921 as L-cystine and gives it its own source caution. A supplier answer for E920 therefore does not automatically cover an E921 ingredient in another formula.

Cysteine may also be present naturally as part of proteins without being an added E920 dough conditioner. An ingredient list naming wheat protein does not mean that isolated L-cysteine was added. Conversely, “flour treatment agent: E920” is a deliberate declaration and should be checked as such.

There is no useful category called a “cysteine enzyme”. If a technical sheet uses both words, ask the supplier to identify each material separately. This prevents an answer about a microbial enzyme from being mistakenly applied to an amino acid that came from a different vendor.

The practical verdict

E920 is not automatically human hair, and it is not automatically halal. A documented fermentation or non-animal synthetic route can be acceptable; a confirmed prohibited source is not. EU law removes human hair from compliant E920 in that market, but feather or other source questions can remain.

For packaged or bakery bread, verify the exact improver or finished product. If the source stays undisclosed, choose a certified or clearly fermentation-derived alternative. That conclusion reflects the evidence without repeating the internet myth that every commercial loaf contains hair.
